How did September fly by so quickly? One bright side of the month moving along is that it’s time to share a new find for the Secret Recipe Club reveal. This month I tried a recipe from Desiree at Steak N Potatoes Kinda Gurl and adapted her Bacon and Roasted Garlic Guacamole.

I love anything with Mexican flavors—tacos, enchiladas, chips and dips—and this guacamole hits every note I want: creamy avocado, mellow roasted garlic, crunchy fried onions and plenty of smoky bacon. If you’re searching for a go-to guacamole that’s a little different from the usual, this recipe delivers.

The roasted garlic becomes sweet and buttery when baked with a drizzle of olive oil and a pinch of salt and pepper. Combined with mashed avocados, lime juice and a touch of cayenne, it gives the guacamole a gentle garlic warmth rather than a raw bite. Frying the onion with chopped bacon adds caramelized sweetness and a satisfying crunch.

I left out the cilantro because I’m not a huge fan, but if you enjoy cilantro it will add a bright herbal lift to the final dip. Either way, this guacamole balances creamy, smoky and savory flavors very well. We finished a bowl in under ten minutes—enough said.

Bacon and Roasted Garlic Guacamole

Description: A rich guacamole made with roasted garlic, crisp bacon and fried red onion. Lime and cayenne add brightness and a little heat. Perfect for parties or an indulgent snack with tortilla chips.

Ingredients

  • 1 head garlic
  • Drizzle of olive oil
  • 2 slices bacon, chopped
  • 4 tablespoons red onion, finely diced
  • 3 avocados, stones removed
  • 1/4 tsp cayenne pepper
  • Juice of 1 lime
  • 1/2 cup cilantro (coriander), roughly chopped (optional)
  • Salt, to taste

Instructions

  1. Preheat the oven to 200°C / 400°F. Slice the top off the head of garlic and press gently to expose the cloves. Drizzle with olive oil and season with salt and pepper. Wrap the garlic in foil and roast for 25–30 minutes, until the cloves are soft and lightly browned.
  2. While the garlic roasts, chop the bacon into roughly 1/2-inch pieces. Cook the bacon in a frying pan over medium heat until crisp.
  3. When the bacon is nearly done, add the diced red onion to the pan and fry until translucent and lightly browned. Transfer the bacon and onion to a plate lined with kitchen paper to drain.
  4. Scrape the avocado flesh into a medium bowl. Season with salt and the cayenne pepper, then squeeze in the lime juice. Mash with a fork until mostly smooth; a few small lumps are fine for texture.
  5. Squeeze the roasted garlic cloves from their skins and chop them roughly. Stir the chopped roasted garlic into the avocado mixture.
  6. Fold in the drained bacon and fried onion. Add chopped cilantro if using. Taste and adjust seasoning with additional salt or lime juice as needed.
  7. Serve the guacamole immediately with tortilla chips or your preferred vegetable dippers.

Notes

This recipe is adapted from Steak N Potatoes Kinda Gurl. Cilantro is optional—omit it if you prefer a purer garlic-bacon-avocado flavor. Roasting the garlic mellows its bite and gives the guacamole a sweet, savory depth that pairs beautifully with the smoky bacon.
