Comfort food at its simplest: a warm, cheesy cauliflower bake that’s creamy, satisfying and easy enough to make any weeknight. This is my cheat’s version of the classic Cauliflower Cheese — no roux, no fuss. Using creme fraiche and grated cheeses gives a rich, silky sauce with minimal effort and less washing up. It’s a great way to get vegetables onto the plate in a way everyone will enjoy.

I often use frozen cauliflower florets for convenience and to reduce waste. Frozen veg is quick, predictable and keeps in the freezer until you need it. If you prefer fresh cauliflower you can use that too — just adjust the initial cooking time so the florets are tender but not overcooked before baking.

The sauce is simply creme fraiche blended with a little dijon mustard and a blend of cheddar and parmesan. The mustard adds a gentle tang that lifts the creaminess while the parmesan contributes a nutty, savoury depth. This mixture doesn’t require stovetop cooking — just mix, combine with the cauliflower and bake until bubbling and golden at the edges.

This recipe is versatile: swap the cheeses to suit what you have on hand, add a pinch of smoked paprika for warmth or a handful of chopped chives for freshness. You can also stir in a spoonful of crème fraîche or Greek yogurt after baking for extra creaminess if you like. Description

A super easy cheat’s recipe for Cauliflower Cheese. A creamy, cheesy side dish that takes minimal time to prepare and pairs well with a wide range of mains. Ideal for busy evenings or as a comforting family favourite.


Ingredients

  • 600g / 1.3 lbs frozen cauliflower florets (or fresh, cut into florets)
  • 300ml / 1.25 cups creme fraiche
  • 1 tsp dijon mustard
  • 50g / 1.75 oz grated cheddar cheese
  • 20g / 0.74 oz grated parmesan
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 180°C / 350°F. Choose a medium baking dish that will hold the cauliflower in a single layer or slightly piled.
  2. Place the cauliflower florets in a large saucepan and cover with boiling water. Simmer gently for 6–8 minutes until just tender but not mushy. If using fresh, check earlier as sizes vary. Drain well.
  3. While the cauliflower drains, combine the creme fraiche, dijon mustard, grated cheddar and parmesan in a bowl. Mix until smooth and season with salt and pepper. Taste and adjust seasoning — both mustard and parmesan add punch, so balance to your preference.
  4. Return the drained cauliflower to the saucepan or a large mixing bowl, pour over the cheese sauce and toss gently to coat every floret. Transfer the coated cauliflower to the prepared baking dish and spread evenly.
  5. Bake in the preheated oven for 15–17 minutes, or until the sauce is bubbling and the top starts to colour. For a crispier top, place under a hot grill/gratin for 1–2 minutes, watching closely to avoid burning.
  6. Remove from the oven and let sit for a minute. Serve immediately as a side dish with roast meats, grilled fish, or as part of a vegetarian meal with a green salad and crusty bread.

Serving tip: Scatter chopped chives, parsley or a little lemon zest over the finished dish for brightness. To add texture, sprinkle a handful of toasted breadcrumbs mixed with a little butter before baking.
