Ingredients

  • ½ lemon, juiced plus remaining half for garnish
  • 1 Tbsp. coconut sugar plus more for garnish
  • 1 oz. vodka
  • 3-4 oz. coconut water
  • a handful of ice

Instructions

  • Combine the fresh lemon juice, coconut sugar, and vodka in a cocktail shaker. Stir until the sugar begins to dissolve.
  • Add the coconut water and a handful of ice, then cover and shake vigorously until well chilled.
  • Pour some extra coconut sugar onto a small plate. Run a lemon wedge around the rim of your serving glass, then gently press and twist the rim into the sugar to coat it.
  • Fill the glass with fresh ice and add another squeeze of lemon if desired. Strain the shaken cocktail over the ice and garnish with a lemon wheel or wedge. For a non-alcoholic version, omit the vodka and enjoy a refreshing lemon-coconut beverage.
