You can substitute regular granulated sugar or light brown sugar for the coconut sugar if needed, but coconut sugar adds pleasant caramel notes and a slightly deeper flavor that pairs beautifully with lemon.

This cocktail balances bright lemon, a touch of sweetness, and the light minerality of coconut water. Ingredients
- ½ lemon, juiced plus remaining half for garnish
- 1 Tbsp. coconut sugar plus more for garnish
- 1 oz. vodka
- 3-4 oz. coconut water
- a handful of ice
Instructions

Combine the fresh lemon juice, coconut sugar, and vodka in a cocktail shaker. Stir until the sugar begins to dissolve.

Add the coconut water and a handful of ice, then cover and shake vigorously until well chilled.

Pour some extra coconut sugar onto a small plate. Run a lemon wedge around the rim of your serving glass, then gently press and twist the rim into the sugar to coat it.

Fill the glass with fresh ice and add another squeeze of lemon if desired. Strain the shaken cocktail over the ice and garnish with a lemon wheel or wedge. For a non-alcoholic version, omit the vodka and enjoy a refreshing lemon-coconut beverage.
