  • 8 small–medium thick slices of sourdough
  • 2 packed cups (250–300g) shredded cooked chicken
  • 1 1/2 cups (150g) grated cheese (Cheddar, Monterey Jack or Mexican blend)
  • 5oz (150g) full-fat cream cheese, softened
  • 1 tbsp chipotle paste (adjust to taste)
  • Juice of 1/2 lime
  • 1/2 tsp smoked paprika
  • 1/4 tsp onion powder and 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • Butter, as needed for frying

Instructions

  1. In a large bowl, combine the softened cream cheese with lime juice, chipotle paste, smoked paprika, onion powder, garlic powder and a pinch of salt and pepper. Mix until smooth.
  2. Add the shredded chicken and grated cheese to the seasoned cream cheese and fold gently until everything is evenly coated. Avoid over-mixing so the chicken stays tender.
  3. Place 2–4 slices of bread in a cold large frying pan (depending on pan size). Spread the inner sides with butter, then flip so the buttered side faces down.
